Briam
The Greeks are good at piles of old stones and telling stories (I haven't finished my sentence, so don't turn up and throw smelly calamari at my house) . . . and making some seriously tasty food.
Briam is not a pile of old stones. This is not really a standalone dish - have as a side dish with something like Bobotie. Trust me - this is one of the best side dishes you'll ever eat (perhaps with the exception of Briam 1.2.)
You need:

About 7 potatoes (Maris Piper or King Edward .... which stay firm)

About 4 courgettes

6 red onions
-
3 Garlic cloves

Box of passata
-
Olive oil

Salt and black pepper
Do it
Preheat oven to 200oC (Gas 6, 400oF).
You need a nice big baking dish. Slice the potatoes into about 5mm rounds; same with the courgettes and red onions. Crush the garlic and mix it in. Salt and grind black pepper liberally so it all gets a good covering. Pour over the olive oil (about 125ml) and the full box of passata. Mix it all well so everything is well coated.
Add it to the dish and put it in the oven uncovered for about 40 mins. Take it out and give it a good stir. Back in the oven for another 30 mins or so. Take it out and check seasoning. I like it when it's getting a little crispy - the smell and flavours are fucking stunning.
Eat the fuck out of it.
