Stafford Briam 1.1

 

The Greeks came up with Briam . . . Dr Broccoli sorted it out yeah??

You need:

  1. About 7 potatoes (Maris Piper or King Edward .... which stay firm)

  2. About 4 courgettes

  3. 6 red onions

  4. 3 Garlic cloves

  5. Tsp smoked paprika

  6. Tsp chilli flakes

  7. TBSP red wine vinegar

  8. TBSP honey

  9. Box of passata

  10. Olive oil

  11. Salt and black pepper


Do it

Preheat oven to 200oC (Gas 6, 400oF). 

 

You need a nice big baking dish. Slice the potatoes into about 5mm rounds; same with the courgettes and red onions. Crush the garlic and mix it in. Salt and grind black pepper liberally so it all gets a good covering. Pour over the olive oil (about 125ml) . Mix it all well so everything is well coated. Put it in the oven uncovered for about 30 mins.

While that is baking, fry one of the chopped up red onions in some olive oil. When onion softens add Tsp smoked paprika, Tsp chilli flakes, TBSP red wine vinegar and cook for about 5 mins. Add TBSP of honey and box of passata and some salt. Simmer for another 5 mins.

When your potato, courgette, onion mixture has had 30 mins, take it out and pour your tomato, chilli, honey sauce over it and mix well. Put it back in the oven for another 30 mins. Take it out, test it. May need a bit more salt or black pepper . . .  may be perfect, may need a bit more baking time.
