Stafford/Jamaican Curry
The Jamaicans do make some tasty shit . . . and then smoke it.
It took Dr Broccoli a good few spliffs to make sense of this recipe, so I can't guarantee anything other than one simple fact. All Jamaicans are fucking speed freaks (with the exception of my mate Derris, who makes walking look like a challenge). But if you look at the line up at the 100m Olympic finals, WTF??? They're all Jamaicans! It can't be because they just fired one up in training . . . my science brain tells me it's all in the food.

Anyway, enough science. Try this. And if it doesn't make you run like Usain Bolt . . . at least it'll make you hasten pretty quickly towards the toilet.
You need:
1 tablespoon coconut oil
1 large onion - chopped
4 cloves of garlic crushed
1 teaspoon of ginger (grated is best, but out of a bottle is quick)
4 spring onions chopped
2 teaspoons of turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon of jerk seasoning
1/2 teaspoon of cayenne pepper (this adds heat, so if you want it hot go for more)
1/2 teaspoon of ground allspice
1 teaspoon of dried thyme
1 tin of chopped tomatoes
3 medium potatoes, peeled and cubed
3 medium sweet potatoes, peeled and cubed
1 large carrot, diced
1 can of chickpeas
1 can of coconut milk
1 cup of water
1 cup of frozen peas
Some broccoli obviously
Salt
1 teaspoon of brown sugar

Do it
OK - so it looks like a shitload of work that'll have you reaching for some weed instead - but it is incredibly easy.
Heat oil in a large pot. Add onion and fry for about 4 minutes.
Add garlic, spring onions and ginger and fry for a few minutes on medium heat.
Add 2 tsp turmeric, 1 tsp cumin, 1 tsp coriander, 1/2 tsp jerk seasoning, 1/2 tsp cayenne pepper, 1/2 tsp allspice, 1 tsp dried thyme and fry on medium heat for 3 minutes.
Add cubed potatoes, broccoli (of course) and chopped carrot and mix well so the potatoes are coated in the spices. Fry for about 8 minutes, occasionally mixing it well to stop sticking and burning.
Add tin of chopped tomato, drained chickpeas, can of coconut milk, cup of water, frozen peas, salt and tsp of brown sugar. Bring to boil and then simmer on lowest heat until the veg are just right.
At this point you can still add some more salt, cayenne pepper to get the taste to your liking. I sometimes add some spicy chutney.
