Lazy Lentils
Your endorphins will go crazy, your bowels will go on holiday. Be warned . . . whoever you prepare this for will fall in love with you . . . really . . . including small cattle and poultry (sometimes even goldfish have been known to bang their bowls).
You need

Sunflower oil (2 or 3 tablespoons)

1 large onion finely chopped

3 cloves of garlic

1 carrot chopped

Some broccoli

2 teaspoon cumin seeds

2 teaspoons mustard seeds

Root ginger (about 1 or 2 inches) grated (or ginger paste)

1 teaspoons turmeric

1 teaspoon medium or mild chilli powder

1 teaspoon garam masala

1 cup of RED lentils (only use red lentils FFS - it won't work with other lentils)

1 tin (400ml) of coconut milk

Vegetable stock - about 100ml

2 tins of chopped tomatoes

Salt

Lemon or lime juice
Do it

Heat the oil in a big pot and fry the onions until just soft (about 5 mins).

Add the chopped carrot, crushed garlic, grated ginger, the cumin and mustard seeds and cook for another 5 mins.

Turn down the heat a bit and add the spices - the turmeric, chilli powder and garam masala and cook for a minute or so.

Add the water, coconut milk, tins of chopped tomatoes, the cup of dry red lentils and a good pinch of salt. Bring to the boil. Then reduce to very low heat and cover to let it simmer for about 45 minutes. Stir regularly to make sure the lentils down stick to the bottom of the pot and burn (the meal WILL be ruined).

Squeeze half a lemon or lime into the mixture and stir and cook for another 15 minutes or so - stirring regularly. You will need to taste it periodically like any dish to add salt or a bit of black pepper if necessary.

When the lentils are soft and it has the consistency of a dahl it is ready to nosh. It goes well with Radioactive Rice ... but then even the goldfish would.
