Piss Easy Pilaff
You need:

1.5 cups of Basmati rice

Large onion
-
Oil or butter (depending on how fat you wanna be)

3 carrots
-
Cup of frozen peas
-
Cup of cashew nuts
-
Handful of sultanas or currants
-
Celery (2 or 3 sticks)

Pint of boiling water.

Nutmeg
-
Ground ginger
-
Yeast extract (Marmite) or block of vegetable stock
-
Salt and sugar
-
Broccoli (obviously) and/or mushrooms and/or courgettes
-
Red pepper
Do it

Boil the kettle.

Rinse 11/2 cups of Basmati rice under cold water and leave to drain.

Put about 2 or 3 tablespoons of oil and a knob of butter into a large pot medium heat.

Chop up one onion, 3 sticks celery, and 1 red pepper.

Add about a teaspoon of cumin seed to oil.

Chop up 3 carrots into small pieces and boil in slightly salted water.

When cumin seeds are sizzling and just turning brown, add rice. Stir well so that the grains are well covered in the oil and fry, stirring frequently. The rice needs to fry for about 5 minutes.

Cut head of broccoli into smallish pieces and microwave.

You need a pint of hot water. Add a teaspoon of Marmite or a cube of vegetable stock.

Back to the frying rice. Add the chopped up onion, celery and red pepper and mix well and fry for another 6 or 7 minutes. If it’s looking a bit dry, drag the ingredients to one side, pour in a bit more oil, let it heat up and then mix well.

When the rice is changing colour – gets a bit brown (but not burned!), turn to low heat and pour the hot water in gently – it’ll sizzle and hiss, so watch out.

Add a handful of sultanas or currants and a teaspoon of salt. Cover and simmer, stirring occasionally.

Microwave the peas.

Add the other veggies – broccoli, carrots, peas.

Add a large handfull of cashew nuts.

Sprinkle in a teaspoon of nutmeg and a teaspoon of ground ginger.

Stir well. You need to keep tasting the rice to gauge when it’s ready. Go too far and it’s stodgy like porridge; not enough and it’s … like the opposite of porridge. If it needs more cooking time and seems a bit dry, just add a bit more water.
