Robbie's Nosh
Lazy . . . on the chubby side . . . but want to make something nice? This is so simple and quick . . . and you'll burn more calories making it than eating it.
You need:
-
Bag of Bulgar wheat
-
1 large onion
-
Vegetable stock cube
-
2 or 3 carrots
-
Peas
-
Vegetable oil
-
2 cloves garlic
-
Other vegetables you might fancy (broccoli obviously, a potato, courgette)
Do it
-
Boil kettle.
-
Put about 1 cup (approx 60g) of the bulgar wheat in a bowl.
-
Cover with hot water. Leave to stand for approx 20 minutes.
-
Chop carrots into small pieces, bit of salt, cover with water and boil until just done.
-
About 2 Tbsp oil and fry chopped onion and garlic. If you are using other veg like potato or courgette, chop into very small pieces and fry as well.
-
Microwave some peas.
-
Drop stock cube into 300ml water and dissolve.
-
Drain the bulgar wheat and add it to the frying veg. Add the carrots and peas. Turn heat down and mix well.
-
Microwave peas until just done.
-
Add the stock and half a teaspoon of salt.
-
Bring to boil, then turn down to low heat, cover and simmer for about ten minutes, stirring periodically. Don't let it get dry, so add more water/stock if necessary.
-
Add black pepper and some soya sauce.
